Kalojaam (Kala Jamun) is a traditional South Asian sweet, widely enjoyed in Bangladesh and India. It is prepared from milk solids (khoya or mawa) mixed with flour, shaped into balls, and slow-fried until it reaches its signature deep brown to almost black color. The slow frying gives kalojaam a rich, slightly caramelized flavor. After frying, the sweets are soaked in mildly flavored sugar syrup, often infused with cardamom, which makes them soft, moist, and melt-in-the-mouth. Compared to regular gulab jamun, kalojaam is darker, a bit firmer, and richer in taste. It is commonly served at room temperature or slightly warm and is a popular dessert at weddings, festivals, and special celebrations.
